The first of my lunch bowl recipes- the idea for these is to make quick, healthy and filling meals which can be easily taken into work or had on the go!
Ingredients- makes 4 portions
2 large avocados
200g tomatoes
a few slices of cucumber, finely chopped
1 fresh chilli, chopped, or 1 tsp chilli paste
400g white beans, cooked
150g fresh spinach
Handful of flaked almonds
Method
Slice the avocados in half and scoop out the middle, transfer to a bowl. Roughly chop the tomatoes and cucumber, add to the avocado along with some salt and pepper and chilli. Stir well.
Drain the white beans, then layer the salad, starting with the spinach, then add the beans, then the avocado mixture.
Wish I could find white beans in Japan! Looks great!

Any bean variety would work! Try chickpeas or butter beans if you have those 🙂
